Having a farm you work with will greatly increase the quality of ingredients you recieve. This is just a basic rule of thumb for cooking. Go to the source, get it when it's in season, and most likely it will be superior in flavor. It is imperative that we support local food sources as they are on the frontline in the battle for delicious produce. We worked exclusively with Hua Momona Farms here on Maui. The farmers are Travis, Tina, & Zach, Ex-Hospitalty workers, who teamed up with a master farmer, PJ, who invested in the land and used organic practices to grow the best product possible.
